    レストラン営業終了後。 毎日やっている、衛生に関わる厨房の清掃です。 見習いの時から当たり前のように教えられ、ずっと続けてきたこと。 23時前後に最後のお客さんを見送り、一息つく間もなくスピーディに始める。 朝から仕込みをして、営業をして、休憩も少ししか取れない。 やっと終わったと思ったところから、厨房の隅から隅まで掃除する。 油汚れも沢山ある。 疲れてるし、全部明日にしてしまいたい。 でも早く終わらせないともっと疲れるし、終電も逃してしまう。 そんな気持ちに必死に抗いながら、いま自分達に出来る限り厨房を綺麗にリセットする。 それが明日来てくれるお客さんの安心にも繋がるだろうし、働く自分達にとっても心地良い環境になる。 そして「自分達はちゃんとやっている」という自信にもなる。 勿論、もっと簡単にしたいし、省略したい気持ちもある。 働くスタッフもそう思ってるはず。 でも、1日でも怠ったらダメなんだと思う。 大掃除も、毎日やれば大掃除ではなく普通の掃除になる。 大切なのは習慣にすること。 そしてルールにすること。 「やる日とやらない日」がある曖昧な作業にしない。 その繰り返しが、衛生的な厨房という環境を作っていく。 清潔であり続ける。 当たり前のことかもしれないけど、この「当たり前」を毎日保つのは大変だし、忍耐がいる。 マニュアルも必要だけど、スタッフを束ね管理する側には、もっと根本に確固たる理念が必要だと思う。 それは自分の場合、修業という厳しい過程の中で培われてきたものでもある。 そして、それだけやっていても事故が起こる時には起こってしまう。 この清掃だって、限られた時間の中でスタッフが出来る全力であって、目に見えないものが潜んでいる厨房に「100%」なんてものはない。 だからこそ、我々に 「これでもう十分」 なんてものは存在しないのかもしれない。
